1 cup soft shortening (part can be butter for taste) 3/4 cup sugar 2 eggs 1 c. cooked pumpkin 2 cup flour 2 t. baking powder 1/2 t. salt |
Cream together the shortening and sugar. Add the eggs and the pumpkin. Mix the flour with baking powder and salt, and then add the mixture to the creamed pumpkin mixture.
Bake on greased cookie sheet at 400 degrees Fahrenheit for 10 min.
Use Orange icing:

3/4 cup powdered sugar 4 - 5 t. orange juice 1 t. grated orange peel |
Drizzle orange icing over the pumpkin cookies. A final touch might be to draw faces on the "pumpkins" to make them look like "jack 'o lanterns". Use chocolate icing for this.
